I am excited to share my eggless vanilla cake recipe. This recipe is perfect for anyone who’s looking for a vegetarian option, or someone allergic to eggs. I have tried other recipes but this one works best, the results are soft, fluffy, and delightful vanilla flavor, This recipe can be enjoyed on its own or paired with whipped cream, cocoa powder, or refreshing fruits

1/2 cup curd (plain or flavored)
1 cup sugar
1 tsp vanilla essence
1/2 cup vegetable oil
1, 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
3/4 milk (gradually)
Directions
- Preheat your oven to 180°C. Grease baking pan (8-inch round), and keep aside
- Start by first putting curd in a mixing bowl, add sugar, and combine it well
- Add in vanilla essence, and give it a mix
- Now add any vegetable oil, and mix until everything is incorporated
- In another mixing bowl mix the dry ingredients, all-purpose flour, baking powder, and baking soda
- Sieve the mixture (dry ingredients) and add it into the wet batter, gently mix it
- Finally, pour in the milk gradually in 3 parts (Important) and combine everything until well combined
- Take a cake mold, place the butter paper on the bottom, pour the cake batter into it, and bake at 180°C for 40-45 minutes
- Serve it with afternoon tea, or as a dessert. and layer it with whipped cream. Enjoy
Notes
- Feel free to experiment with flavors by adding cocoa powder for a chocolate cake or citrus zest for a refreshing twist.
- Keep all ingredients at room temperature
