1 cup quinoa
1/4 red onion
1 tomato (seedless)
1 medium bell peppers
1 cup mango
1 cucumber (seedless)
1/2 avocado
1/2 cup roasted peanuts
50 grams Feta cheese
Parsley
- Salad Dressing
100 grams olive oil
50 grams lemon
5 grams honey
Directions
- Firstly we’ll boil quinoa, to boil quinoa, heat the sauce pan with water, let it boil, add in your quinoa, a pinch of salt, and simmer it for 20 minutes (keep stirring for even cooking)
- Remove from heat rinse and let it rest for 5 minutes until fluff
- In a pan got pan roast peanuts until light brown
- Let’s dice the onions, tomatoes, cucumber, and Bell peppers
- Cut the avocado and mango into cubes, chop parsley
- Now in a mixing bowl combine everything and give it a toss.
- Add in crumble feta cheese.

- Take a bowl and start mixing lemon, olive oil and honey, mix it well untill combined
- Now pour your dressing into the mixing bowl and give it a gentle toss
