2 slices bread (any)
- Cheeses
70 grams cottage cheese (diced)
20 grams feta cheese
- Vegetables
30 grams capsicum (diced)
30 grams button mushroom (sliced)
15 grams onions (diced)
4-5 slices of jalapeno (diced)
- Sauces
30 grams mayonnaise
20 ml hot sauce (any)
5 ml soy sauce
Directions
- Firstly dice the cottage cheese into small size cubes, put aside
- Now dice capsicum, and onions, and slice the mushrooms”
- Heat the pan, add oil, and saute the veggies (onions, capsicum and mushroom)
- Add in the cottage cheese, and season it with salt, black peppers, chili flakes (for extra heat), and Italian seasoning. add a pinch of sugar to balance the flavors
- Pour soy sauce on the rim of the pan. and toss until everything is combined
- Put it in a bowl and rest aside
- Now take your bread slices, spread the mayonnaise and hot sauce
- Cover it up with the cottage cheese mixture we just prepared
- Add in your jalapeno, and feta cheese on top
- Close the sandwich and serve
Notes
- Be generous with the seasoning, adjust it according to your liking
- Here I am using button mushroom, feel free to substitute it with other mushrooms
